Rational Ovens in Canada: Models, Features and Sizing

A Rational oven is a commercial combi oven made by RATIONAL, a German manufacturer, that cooks with convection heat, steam or both at once and adjusts itself to the food in the cabinet. Kitchens use it to roast, bake, steam, braise, grill and regenerate food in one footprint, with far less supervision than a conventional oven needs. Babak Food Equipment is an authorized RATIONAL dealer, and this guide explains the models, features and sizing questions we hear most from Canadian kitchens.
You may also see people search for “rationale oven” or “Rational kitchens”. They mean the same brand. If you want to compare combi lines first, start with our combi ovens category.
What is a Rational oven used for?
The short answer is almost everything that happens in a hot kitchen. A single unit can replace a convection oven, a steamer, a griddle, a braising pan and a holding cabinet during a normal service. Typical uses include:
- Roasting and baking. Chicken, ribs, vegetables, breads, pastries and desserts, with humidity controlled for crisp crusts or moist interiors.
- Steaming and poaching. Rice, fish, vegetables, eggs and sous-vide style cooking in bags.
- Grilling and searing. Steaks, burgers and fish on grill trays, without a separate char station.
- Regenerating and holding. Banquet plates and cook-chill production reheated gently and held until service.
- Overnight cooking. Loaded in the evening and finished by morning, so stocks, braises and slow-roasted meats don’t tie up a person.
Hotels, hospitals, care homes, caterers, restaurant groups, schools and bakeries all rely on this type of oven, because one well-used unit can free up burners, fryers and prep space.
How a Rational oven works
Inside the cabinet, a fan moves hot air across the food while a steam generator or injection system adds moisture on demand. The oven has sensors for temperature, humidity and, on the intelligent models, the state of the food itself. You pick a result (for example, “roast chicken, golden”) and the control adjusts time, temperature and humidity until it gets there, rather than just counting down a timer.
That matters for consistency. A new cook and a veteran cook can load the same tray, press the same program and see the same result. It also means fewer burnt trays during a rush, because the oven manages the cooking curve while staff work the line.
Rational oven models and ranges
The brand is organized around a few product lines. Model names change as RATIONAL updates its range, so ask our team which versions are currently offered.
iCombi Pro
The iCombi Pro is the flagship combi oven. It senses what is in the cabinet and adapts to it, supports mixed loads, and records cooking data useful for food safety documentation. It comes in compact tabletop sizes up to large roll-in units. Capacity is described by the number of pans and their size, for example 6-half or 10-1/1.
iCombi Classic
The iCombi Classic keeps the core combi functions with a simpler control for kitchens that want manual control over cooking. It suits operations with stable menus and cooks who prefer to set time and temperature themselves.
iVario
The iVario is a multifunctional cooking system rather than a classic oven. It works like a tilting skillet, boiling pan and fryer in one machine, with a heated base that cooks fast and evenly. Kitchens use it for sauces, soups, stews, pasta, pan-frying and deep-frying in the same pan.
Earlier SelfCookingCenter and CombiMaster units
Many kitchens still run earlier SelfCookingCenter and CombiMaster models. Racks, grids and care products for them are handled through our parts and accessories department.
Electric or gas Rational ovens
Rational combis come in electric and gas versions. The choice depends on your building as much as your menu:
- Electric combi ovens are common in compact sizes and anywhere gas piping is not available. They need the right voltage and amperage at the point of connection, and a licensed electrician should confirm your service. Browse electric combi ovens.
- Gas combi ovens suit larger roll-in kitchens that already have gas service and want lower operating costs on heavy-use ovens. See gas combi ovens.
In British Columbia, a gas appliance must carry an accredited certification mark, and regulated gas work is done by a licensed gas fitter working under the contractor’s installation permit with Technical Safety BC (or the permit authority in cities such as Vancouver and Burnaby). Electrical equipment must carry a certification mark from an agency accredited by the Standards Council of Canada. Check these details with your contractor before you order.
Key features that matter in a working kitchen
Precise climate control
You can set the cabinet humidity anywhere from dry convection to full steam. That lets a bakery proof, steam-inject and bake in one oven, and lets a restaurant sear fish and keep it moist in the same cycle.
Automatic cleaning
Most current models run an automatic cleaning cycle with cleaning and care tabs. Staff load the tabs, start the program and walk away. This saves labour compared with hand scrubbing a conventional oven, and it keeps the cabinet in consistent condition. The right tablets are a routine consumable, for example the Rational care tabs used by units that take them.
Programs and connectivity
You can store your own recipes and share them across several ovens or locations, then check cooking records on a connected device. Chains find this useful for keeping menu items identical from one site to the next.
Water and descaling
Combi ovens use water for steam, so water quality matters. Hard water leaves scale, which reduces performance and shortens the life of the steam generator. Discuss filtration and, where needed, softening with your plumber when you plan the installation.
Energy use
Rational designs its ovens to heat quickly and use steam efficiently, and you can read more in our post on the energy efficiency of Rational ovens. In practice, the biggest saving comes from using the oven fully, since one combi running two or three jobs can take the place of several less efficient appliances.
Choosing the right Rational size
Pan capacity drives everything else. Use these rules of thumb and then confirm with our team:
- Cafes, small restaurants and food trucks: compact units with around 6 pans are a good start when the oven supports a menu of a few hot items.
- Mid-size restaurants and bakeries: 6 to 10 pans of full-size 1/1 trays handle a busy dinner service and daily baking.
- Hotels, caterers and institutions: 10 to 20 pans in roll-in or stacked configurations support banquet and batch cooking.
Count how many covers you plan to produce in your peak hour, then match the volume of food to the number of trays you can load at once. Leave room for growth. A combi that is too small becomes a bottleneck, while one a size too large is rarely a problem for long.
Plan the space before you commit. Ovens need clearance around the cabinet, an exhaust or condensation hood where required, a drain connection, and a stand or base at a comfortable working height. The UltraVent condensation hood for the iCombi Pro XS is one example of the accessories that go with a compact unit. Other kitchens need a full exhaust and hood system, and your local building and health authority will have the final word on ventilation.
Rational oven for home use
People sometimes search for a Rational oven for home. These are professional machines, built for commercial electrical service, plumbing and ventilation, and sized for restaurant volume. They are rarely a practical fit for a home kitchen. If you cook for a business, talk to us about which compact model matches your permits and utilities.
Rational compared with other combi ovens
Rational is one respected combi manufacturer, and we also carry other lines. As an authorized UNOX dealer, we can show you the UNOX range side by side with Rational, so you compare the controls, the pan capacity and the cleaning systems on your own short list. See the full range of commercial ovens, and our post on whether your kitchen needs a combi oven if you are still deciding on the category.
If you want to start with a lower investment, browse our used restaurant equipment. Our certified pre-owned listings have included units like the Rational iCombi Pro XS 4-half, and each listing describes its age and condition.
