Atosa 7700 Full-Size Electric Food Warmer, 1,200 W
A commercial food warmer keeps cooked food hot, safe and ready to serve from the end of prep until the plate leaves the pass. Babak Food Equipment offers countertop food warmers, food well warmers, display warmers and holding equipment for restaurants, cafés, buffets, caterers, convenience stores, hotels and institutional kitchens across Vancouver and British Columbia – from brands such as New Air, Omcan, Atosa and Globe.
Types of commercial food warmers
Countertop food well warmers
Countertop food warmers hold hotel pans in a heated well. Wet models use a water bath for gentle, even heat that keeps food moist; dry models heat the pan directly and are quicker to set up and clean.
Drop-in food wells
Drop-in warmers are built into a counter or buffet line so food sits flush at serving height – the usual choice for cafeterias, buffets and serving lines.
Display and merchandising warmers
Heated display cases keep pastries, pizza slices, sandwiches and fried foods warm while showing them to customers – popular in cafés, bakeries and convenience stores.
Strip and heat lamp warmers
Overhead strip warmers and heat lamps keep plated food and fried items hot on the pass or at a fry station for a short time before service.
Soup and holding cabinets
Soup kettle warmers hold soups, chili and sauces at serving temperature, while heated holding cabinets keep larger batches hot for catering and banquets. To bring chilled food back up to temperature first, see our rethermalizers.

How to choose an electric food warmer
Food type: moist foods such as rice, sauces and vegetables do best in wet heat; crispy foods do best under dry heat or a heat lamp.
Capacity: count the hotel pans or portions you hold at peak and the pan sizes and depths you already use.
Temperature control: choose an adjustable thermostat that can keep food at or above 140°F (60°C), the usual minimum for hot holding.
Power: most countertop warmers plug into a standard outlet, but larger units may need 208/240 V or a dedicated circuit.
Placement: decide whether the warmer sits on a counter, drops into a serving line or faces customers as a display.
Cleaning: stainless steel wells, drains on wet models and removable parts make daily cleaning easier.
Wet vs. dry food warmers
Wet heat uses a water bath under the pans. It heats evenly, keeps food moist and helps prevent scorching, but needs filling and draining.
Dry heat warms the pans directly. It is quicker to start and easier to maintain, but food can dry out faster unless it is covered.

Frequently asked questions
What temperature should a commercial food warmer hold food at?
Hot food should be held at 140°F (60°C) or higher to keep it out of the temperature danger zone. Check your local health authority’s requirements for your menu.
Can a food warmer reheat cold food?
Food warmers are designed to hold hot food, not reheat it. Reheat food quickly to about 165°F (74°C) first, using an oven, steamer or rethermalizer, then move it to the warmer.
How long can food stay in a food warmer?
It depends on the food and your food safety plan. Many kitchens set holding times of a few hours and check temperatures regularly.
What is the difference between a buffet food warmer and a holding cabinet?
A buffet or food well warmer holds open pans for self-serve or line service. A holding cabinet is an enclosed, heated box that keeps larger batches hot behind the scenes.
Do electric food warmers need special wiring?
Many countertop warmers plug into a standard outlet, while larger drop-in or multi-well units may need a dedicated or higher-voltage circuit. The specification sheet lists the exact requirement.
