A manual gas griddle gives cooks direct control of the flame under each section of a thick steel plate – the classic choice for burgers, eggs, pancakes, smash patties and stir-fried dishes. Babak Food Equipment offers a very wide range of commercial manual gas griddles for restaurants, diners, cafés, food trucks, hotels and institutions across Vancouver and British Columbia, led by Vulcan and Wolf, plus Brika and Royal. They are part of our commercial griddles range.
Types of manual gas griddles
Countertop manual griddles
Countertop griddles sit on an equipment stand or refrigerated chef base and come in widths from about 24 to 72 in. They are the most common format for restaurant lines and food trucks.
Heavy-duty and medium-duty models
Heavy-duty griddles use thicker plates and stronger burners for all-day, high-volume service. Medium-duty models suit lighter menus, breakfast cafés and smaller kitchens.
Range-top and restaurant range griddles
Many restaurant ranges include a manual griddle section beside open burners, a space-saving option when you need both on one line.
How to choose a manual gas griddle
Width and burners: most griddles have one burner and control valve for every 12 in of width, so you can run hot and cooler zones at once.
Plate thickness: plates of about 3/4 to 1 in hold heat better when you load cold product; thinner plates heat up faster.
Natural gas or propane: order the gas type that matches your site, or confirm the model can be converted.
Ventilation: gas griddles need to sit under a commercial exhaust hood that meets local code.
Grease management: a wide grease trough and a large, removable drawer make cleaning faster.
Space: plan for the stand or chef base height, clearance to combustibles and the gas connection.
Manual vs. thermostatic gas griddles
With manual controls the cook sets the flame, much like a burner, and the plate temperature changes with the load. Thermostatic gas griddles hold a set temperature automatically, which gives more consistent results for less experienced staff. Manual models are simpler, generally cost less and are easy to service.

Frequently asked questions
What is a manual gas griddle?
It is a gas-fired flat-top with simple valve controls for each burner. The cook adjusts the flame by hand instead of setting a temperature.
How thick should a commercial griddle plate be?
About 3/4 in is common for general use and 1 in for heavy-duty, high-volume cooking. Thicker plates recover faster when you add cold food.
Can a gas griddle run on propane?
Many commercial griddles are available for natural gas or propane, and some ship with a conversion kit. Confirm the gas type before installation.
Does a gas griddle need a hood?
Yes. Commercial gas griddles produce grease-laden vapour and must be installed under a code-compliant exhaust hood.
