A thermostatic gas griddle holds the plate at the temperature you set, so pancakes, eggs, burgers and grilled sandwiches cook the same way every time, even with less experienced staff. Babak Food Equipment offers commercial thermostatic griddles for restaurants, cafés, diners, hotels and institutions across Vancouver and British Columbia, from Globe, Sierra, ikon and Atosa. They are part of our commercial griddles range.
How a thermostatic griddle works
Each section has a thermostat and sensor under the plate. When the temperature drops, the burner fires harder; when it reaches the set point, the flame turns down. Typical settings run from about 200 to 550°F (93–288°C).
How to choose a thermostatic gas griddle

Width and zones: most models have one thermostat and burner for about every 12 in, so you can set different zones for eggs and burgers.
Plate thickness: about 3/4 to 1 in plates hold heat well when loaded with cold product.
Gas type: choose natural gas or propane to match your site, or check whether a conversion kit is available.
Ventilation: install the griddle under a commercial exhaust hood that meets local code.
Grease management: look for a wide grease trough and an easy-to-empty drawer.

Thermostatic vs. manual gas griddles
Manual gas griddles let cooks set the flame directly, are simple to service and generally cost less. Thermostatic models cost more but give consistent results, can save gas during quiet periods and make training easier. If you have no gas supply, also see electric griddles.

Frequently asked questions
What is a thermostatic griddle?
It is a griddle with thermostats that automatically hold each section at a set temperature, instead of the cook adjusting the flame by hand.
Is a thermostatic griddle worth it?
For menus that need repeatable results, such as pancakes, eggs and portioned burgers, many operators find the consistency and potential gas savings worth the higher price.
What temperature should a griddle be for burgers?
Many kitchens cook burgers at about 350–400°F (177–204°C) and eggs and pancakes lower, around 300–350°F (149–177°C). A thermostatic griddle makes it easy to hold those zones.
