Atosa ATSB-36 Infrared Salamander Broiler – 43,000 BTU
A salamander broiler is a high-heat overhead broiler used to finish, brown, glaze and broil food in seconds. Mounted above a range or placed on a counter, it lets chefs crisp a gratin, caramelize a crème brûlée, toast bread or finish a steak without leaving the line. Babak Food Equipment offers commercial salamanders for restaurants, hotels, pubs and catering kitchens across Vancouver and British Columbia, from brands including Vulcan, Royal and Atosa.
Types of salamanders
Gas infrared salamanders
Infrared burners heat up fast and deliver intense top heat, which makes gas salamanders the standard on many restaurant lines.
Electric salamanders
Electric models use high-output elements, need the correct electrical circuit, and are a good choice where gas isn’t available.
Range-mount and countertop salamanders
Range-mount salamanders sit on a backriser above the burners to save counter space; countertop models stand on a worktable or equipment stand.
How to choose a salamander broiler
Width: match the salamander to the range below it or to your counter – common widths are about 24 to 36 inches.
Gas or electric: confirm your gas type, or the voltage and phase an electric model needs.
Rack adjustment: a multi-position or lift-style rack lets you move food closer to the heat for searing or lower for finishing.
Mounting: check that your range backriser and the salamander’s mounting kit are compatible.
Ventilation and cleaning: plan the unit under your hood, and look for a removable grease tray for daily cleaning.

Frequently asked questions
Can you cook a steak in a salamander?
Yes. The strong top heat sears and finishes steaks, chops and fish quickly. Many kitchens sear on the grill and finish under the salamander.
What’s the difference between a salamander and a cheesemelter?
A salamander runs much hotter and is built for broiling and searing. A cheesemelter uses gentler heat for melting cheese, browning toppings and holding plates.
How much does a salamander broiler cost?
The price depends on width, gas or electric operation and brand. Request a quote and our team will compare options that fit your budget.
